Raw Cheesecake


Raw Cheesecake

A ‘raw’ cheesecake is a desert made with fruits and nuts which have not been cooked. The following is a simple recipe which can be adapted to use with any fruits for flavour.

Ingredients

Base:

1½ cups macadamia nuts

1 cup dates

Pinch of good sea salt (ie celtic, Himalayan)

Cream Filling:

3 cups cashew nuts

¾ cup lemon juice

¾ cup agave syrup or honey

¾ cup coconut oil

1 tablespoon pure vanilla extract

Topping:

2 cups of blended fruit (ie mango, strawberries, raspberries etc)

½ cup dates

Method:

Place your base ingredients into a high speed blender and process until completely chopped and mixed. Spread the base evenly into a circular or rectangular cake dish. Ensure you put some baking paper into the base of the dish so that you can easily get the cheesecake out when ready. Place into the refrigerator while you do the next stage.

Place all the filling ingredients into your high speed blender and process until smooth. If your filling is a bit dry add a little bit of water to moisten, but take care not to add more than ¼ cup. Smooth your filling ingredients over your base and refrigerate.

Process the fruit and dates in the blender and pour over the top of the cheesecake. Place the finished cheesecake into the freezer overnight. The next day turn it out and cut up into serves. Keep frozen until you use it. Enjoy!
